I have just baked up a batch of Master 8’s favorite lunch box snack, cookies. These double chocolate cookies are loved by the whole family. I send them to school in the reusable snack bags and I freeze the rest in a large zip fresh bag and use as a grab and go snack.
Ingredients
125g butter
1tsp vanilla bean paste
100g rapadura sugar (or sugar of your choice)…
1 egg
180g plain flour
1/2 tsp bicarbonate soda
35g cocoa powder
100g Chocolate of your choice (chopped into small pieces)
Method
1. Preheat the oven to 180degrees. Line 2 baking trays.
2. Beat butter, vanilla, sugar and egg with an electric beater until smooth. Mix in sifted combined dry ingredients and then chopped chocolate.
3. Place a level tablespoon of mixture onto lined trays and bake for 10-12 minutes.
Allow to cool & enjoy.
